French Style Stir Fry


– 1 cup Leeks (chopped)
– 1/2 tomato (or 1/2 c chopped grape tomatoes)
– 1/2 tbsp coconut oil
– Sea Salt
– Black Pepper
– Herbes de Provence
– Chicken
– Spaghetti Squash

1. In a frying pan, cook raw chicken until all pink has disappeared.
2. Add in oil, leeks, tomato, and spices/salt.
3. In the microwave, cook Spaghetti Squash ( cut in half, and scrape out the centre bits with seeds) for 5 minutes. Remove after 5 minutes and try to break apart the insides of the squash (it should come away from the skin easily, with a stringy appearance)… continue cooking for 2 minute intervals until the inside comes off of the skin easily.
4. Cook leeks and chicken until chicken and leeks turn slightly brown. Tomatoes should be soft.
5. Scrape the finished Spaghetti Squash into a bowl and season with a little salt and pepper if you like, then pour your lovely stir fry on top and enjoy
