Chicken Taco Soup

INGREDIENTS:

  1. 6 – 8 hours in the crock pot on “low” setting”; combine the followingIMG_2107
  • 4 chicken breasts (thawed and uncooked)
  • 1 box of chicken broth
  • 1 can of diced tomatoes
  • 1 pack of taco seasoning
  • assorted mexican spices (can include: tex mex, chipotle, garlic, etc)

2. After 6 to 8 hours on “low”, remove the crockpot lid and use two forks to pull apart chicken. This process should take no longer than 5 minutes if the chicken is cooked enough.

3. Last 2 hours in the crockpot, on “low” setting:

  • 1 can of black beans
  • 2 cups of frozen corn
  • sliced mushrooms
  • diced bell peppers (about 1 cup)
  • chopped red onion

4. Serve in a bowl and top with:

  • avocado (cubed)
  • cheddar cheese (grated)
  • tortilla crisps *** optional**
