Shrimp Tacos

INGREDIENTS:

  • Shrimp
  • Tortilla
  • Tex mex
  • 2 cups frozen corn (thawed)
  • 3/4 cup red onion (diced)
  • 1 whole tomato (diced)
  • 1 whole avocado (cubed)
  • 1 cup black beans (drained and rinsed)
  • Lime juice (1 lime squeezed)
  • 1 tsp cilantro **optional
  • Salt & pepper

Directions:

  1. Season shrimp with tex mex, salt and pepper.
  2. Skewer and grill shrimp until pink

  3. Combine corn, onion, tomato, avocado, black beans with cilantro and lime juice in large mixing bowl.  Season mixture with salt and pepper.
  4. Add ingredients to tortilla and you’re ready to go!
