SPAGHETTI SQUASHAGNA

INGREDIENTS:

  • 1 medium size spaghetti squash
  • 1 TBSP olive oil
  • 1 TBSP avocado oil
  • 1/2 onion chopped
  • 2 cloves garlic chopped
  • 12oz lean ground beef OR turkey OR chicken
  • 6oz turkey sausage
  • 1 can crushed tomatoes
  • 2 tsp oregano
  • 2 tsp basil
  • 2 tsp crushed red pepper
  • 1 cup mozzarella cheese
  • 1/2 cup cottage cheese
  •  Parmesan cheese

Directions:

1. Preheat oven to 400 degrees

2. Slice spaghetti squash length wise and remove seeds, rub with avocado oil, season with salt and pepper, place face down on baking sheet and bake for 40-60 minutes

3. Sauté onion and garlic in avocado oil on medium heat

4. In a large pan, cook ground turkey on medium heat

5. In a large pan, cook sausage on medium heat

6. Once the meat is cooked, add ingredients from all pans into one.  Now, add crushed tomato, basil and oregano (1tsp each), stir to combine

7. In a separate bowl, add mozzarella cheese (1/2 cup) and cottage cheese.  Season with 1 tsp basil and oregano, a pinch of salt and pepper, stir to combine.

8. When the spaghetti squash is fully cooked, remove from the oven and flip face side up.

  • Evenly divide cheese mixture between each half of squash
  • Evenly divide meat sauce between each half
  • Top with 1/4 cup of mozzarella cheese and sprinkle a little parmesan cheese

9. Switch the oven the broil and place spaghetti squash back in the oven for 4-6 minutes
