Roasted Chickpea & Chicken Burrito


  • 3 cups ChickpeasIMG_2222
  • 1 kg Chicken
  • 1 Yellow onion
  • 1 Red bell pepper
  • Cauliflower
  • 1 TBSP Soy sauce
  • 3 TBSP Avocado oil
  • 1 tsp Chilli powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 Lemon


  1. Fire up the oven to 425 degrees Fahrenheit.
  2. While it pre-heats; chop up the onion, bell peppers and cauliflower into pieces about the size of a chickpea.
  3. Toss the chickpeas into a large mixing bowl followed by the avocado oil, soy sauce, onion, bell peppers and all the spices (chilli powder, cumin, paprika)… Mix it up!
  4. The oven should be ready to go, spread your chickpea mixture across a baking sheet and bake for 20 minutes.  At the same time bake chicken for 20-25 minute


5.  Now roll up that burrito!
