BLACKENED SALMON

INGREDIENTS:

Option #1:

  • Paprika 1TBSP
  • Thyme (10 fresh springs, leaves removed & chopped)
  • Oregano 1 TBSP
  • Kosher Salt 1 TBSP
  • Salmon (4, 6-7 ounce pieces of salmon)

Option #2:

  • Cajun Spice

Directions:

  1. Combine all ingredients in large mixing bowl
  2. Put mixture onto plate and coat salmon on the flesh side only
  3. Heat a large cast iron pan over high heat for 2-3 minutes then reduce to medium heat
  4. Add salmon to pan flesh side down for 2-3 minutes
  5. At this point you can either flip salmon and continue to cook until the skin becomes crispy (5-6 minutes) OR bake salmon in oven for 12-15 minutes at 400 degreed Fahrenheit
