MEXICAN FRITTATA

INGREDIENTS:

  • 4 whole eggsIMG_1908
  • 18oz. carton of liquid egg white
  • Bell pepper (1/2 yellow, 1/2 orange here)
  • 1/2 white onion
  • 1 cup spinach
  • 1TBSP avocado oil
  • 1 tomato diced
  • cumin, oregano, chilli powder, salt

Directions:

  1. Preheat oven to 400 degreed F
  2. In a large frying pan sauté bell pepper, onion & spinach in avocado oil, slowly add spices

  1. Remove from heat
  2. In a separate bowl, mix eggs and egg whites
  3. Combine ingredients from frying pan and mixing bowl into oven safe dish

  1. Place into preheated oven for 10-12 minutes
