BEEF QUESADILLA

INGREDIENTS:IMG_1633

  • 1/2 cup zucchini
  • 1/2 cup bell peppers
  • 1 cup spinach
  • 1/4 cup grated cheese
  • 1/4 cup salsa
  • 300g beef (this is left overs from roast)

Directions:

  1. Saute zucchini, peppers & spinach (or any combination you like)
  2. Add beef, salsa, cheese & vegetables to one flat bread, cover with a second flat bread.
  3. Bake on cookie sheet at 450 degrees fahrenheit for 8-10 minutes or until golden brown, cut into wedges
