1.  Pre-heat oven to 400 degrees fahrenheit.  Cut salmon into individual portion sizes.    *Generally, animal protein sources require the longest prep time, when time is limited, having pre-cooked protein sources leaves a variety of quick meal options.

2. If you are looking to maximize your nutrient intake, from a micronutrient standpoint (vitamins & minerals) adding a wide variety of vegetables to your diet is a must.  Chop your leeks into thin slices and move onto step 3.

3. Coat aluminum foil with avocado oil, place salmon in the centre, lightly coat salmon with lemon juice, season with dill weed, salt, pepper and finally add leeks.

4. Place salmon on baking sheet, bake for 12-15 minutes
