Stuffed Bell Peppers


  • 6oz ground meat (beef & bison are my two favourites)
  • 1/2 cup black beans
  • 2 bell peppers
  • 4 TBSP salsa
  • 2 TBSP goat cheese
  • Diced red onions
  • Garlic & onion powder
  • 1 TBSP coconuts oil


  1. Pre-heat oven to 405 degrees fahrenheit
  2. Cut tops of bell pepper and remove seeds inside
  3. Spray a baking sheet and place the bell peppers on the sheet with the open-side facing down. Bake for 10-12 minutes.
  4. Add 1 TBSP of coconut oil to frying pan and sauté onions
  5. Add ground meat to skillet
  6. When meat is nearly finished add beans and salsa; mix with spatula
  7. Remove bell peppers from oven add ingredients from frying pan, top with goat cheese
  8. Bake in oven for additional 8-10 minutes
